The most important thing when baking a cake is MIXING - beat your butter and sugar for five minutes scraping down the bowl intermittently - time it - so it is super light coloured and really fluffy - of course there is a point at which it starts to split but as long as your not mixing it for half an hour or something silly you'll be fine. After you have mixed all the ingredients together mix for a LONG TIME as well, this will make it light and fluffy too, if it is not mixed enough it will not have lots of air pockets which will expand in the oven and will also stop it from being too dry - like creaming your butter and sugar you want to do this for a while too, a lot of people don't mix half as long as they should I've found, often a big problem in how their cakes turn out.

don't open the oven half way through but don't put the cake in too long either - keep it in the amount the recipe says, then you can open the door and i fit really is under-cooked then keep it in only 2/3 mins at a time. do you have a fan oven? if so, try turning the temp down a little.
