I went to the USGTF a few years ago and got certified. After having some trouble finding work I talked to the NPGIA they offer a great 9 day program that also includes a great business section. After attending the NPGIA certification it was by far much more informative and educational that the USGTF. I am now working for a golf learning center in Phoenix, AZ. Email me anytime if you have any questions.
If I am 105 lbs, 5'10, 23 year-old male, should I be nervous about eating 3500 cal/day?
First of all, congratulations on one week down! I bet it was the hardest week of your life.
The good news? It probably was. Speaking from personal experience, that first week was definitely the hardest. But now that you've conquered that, you can pretty much do anything!
First of all, I am not going to tell you not to be nervous about gaining weight, because you ARE going to be nervous. That's what eating disorders do. But don't be scared. Even if gaining weight does seem scary, starving yourself to death is much scarier.
As for the calories, I can't say exactly, because I'm a girl and therefore have a different body type. I would honestly just eat as much as you can make yourself be comfortable with, provided that the foods you eat are healthy for you. Concentrate on carbs, for energy, and protein, for building up muscle. Fruit has natural sugars that can satisfy a sweet tooth but are still really healthy for you (and unrefined).
