I always find the package instructions are off, beans typically take longer then they recommend to cook.

I have been cooking beans for years, the recipe passed down through the families. We eat bean soup the first day then re-fry the beans the next day to incorporate into a new meal. Infact, I just made a pot of beans last night and will be making bean enchildeas today.

I cook many different types of beans, and I soak all of them EXCEPT pinto beans. I find soaking pinto beans always leads to them splitting terribly bad. Sort the beans and wash them, discard half beans and any little rocks you may find. Rinse them.

Then I just throw them in the crock pot on high to cook all day. It makes it easy, they don't burn this way, and they cook well. Add desired amount of beans, add 3-4 cups of water for every cup of beans. You can always add more water later if needed. Add a bay leaf or two, a few cloves of garlic, a dash of cinnamon, a few dashes of salt, a finely diced onion if desired, and a chunk of salt pork or a slice or two of bacon (optional). Let cook until soft, and they turn out delicious every time. (the onion and garlic will cook down and not be noticeable, just adding flavor. Pull out and discard bay leaf when finished cooking,)

They are honestly one of the easiest things to cook, this is always my go to dinner on days I know I am going to be busy and don't have time to cook a dinner.

Boston Baked Beans.-makes about 1-1/2 quart, just multiply for more.

Soak 1 lb Northern whites overnight. Drain and cover with fresh water and bring to 135 degrees and let stand for 35 minutes, now bring to simmer till proper tenderness 45 minutes (depends on freshness of beans).

Place in crock with:

1/4 cup molasses

1/4 cup ketchup

3/4 cup finely diced onion

1-1/2 TBSP ground dry mustard

1-1/2 tsp salt

1 tsp white sugar

(optional) 1 tablespoon Worcestershire sauce

1 cup of the boiling water

Cook on low for 5 hours.

Best made a day in advance, reheated the day used.

OOPS forgot, some diced bacon or ham in there is nice.
