Famous all over Europe, Welsh Rarebit is a far-off relative to cheese on toast, made with a cheese and ale sauce, and Welsh Rarebit Day commemorates this well-known dish. You need:
4 slices of cubed American or sharp cheddar cheese. Melt over hot (not boiling) water, then stir in:
3/4 cup cream
1/2 tsp dry mustard
1/2 tsp worcestershire sauce
1/4 tsp salt
dash of pepper
Serve immediately on toast or crackers.
