PLUM PUDDING

3/4 cup sifted all-purpose flour

2 cups mixed cut-up candied fruit

1/2 cup chopped blanched almonds

1/4 cup all-purpose flour

1 cup soft day-old bread crumbs

Sift together first 6 ingredients. Mix suet, sugar, milk and cider; add eggs. Mix raisins, currants, fruit and nuts with 1/4 cup flour. Add with crumbs and flour mixture to suet mixture. Mix well.

Turn into greased and floured 2 quart pudding mold or 2 1-pound coffee cans. Cover with 2 thicknesses of wax paper, allowing space for pudding to rise, and tie tightly.

Place on rack in a large pot or Dutch oven with a tight fitting lid. Pour in enough boiling water to come half way up on one side of mold. Cover.

Bring water to boil, turn to simmer and steam 2 1/2 hours.

Plum pudding is actually a moist cake. It use to be cooked in a cloth bag tied at the top and put down into boiling water. When served it is topped with a sugar icing with a little rum in it called "hard sauce". You are suppose to eat a very small slice, not like the slices of a regular cake. Plumb puddings are served at Christmas time dinners.

Hard sauce (white):

1/4 cup butter

1 cup powdered sugar

1 teaspoon vanilla or 1 tablespoon brandy or rum

2 pasteurized eggs whites or 2 tablespoons cream

Separate eggs and reserve yolks for another purpose (may be frozen).

Beat butter, gradually adding sugar until light and fluffy. Add egg whites or cream and beat until frothy.

Mound on a dish and decorate top with a lightly sprinkling of freshly grated nutmeg. Freeze until set.

This sauce may be foamed through an iSi Whip or frozen on an Anti-griddle.

Christmas Pudding Shots

Ingredients:

225 g christmas plum pudding

600 ml milk

250 ml double cream

125 g vanilla ice cream

100 ml brandy

Directions:

1Crumble Christmas pudding into a jug. Add the rest of the ingredients and blend with a hand blender until smooth and fluffy. Leave to chill in fridge for approximately 4 hours.

2Blend the mixture again before serving with a little extra milk until you have froth. Pour straight into chilled shot glasses.

Ingredients

300g/10½oz mixed dried fruit (sultanas, currants, raisins)

75g/3oz caster sugar

2 cinnamon sticks

2 tsp ground mixed spice

6 cloves

½ whole nutmeg, finely grated

1 orange, zest only, finely grated

1 unwaxed lemon, zest only, finely grated

750ml/1 pint 5fl oz bottle good quality vodka

300g/10½oz mixed dried fruit (sultanas, currants, raisins)

75g/3oz caster sugar

2 cinnamon sticks

2 tsp ground mixed spice

6 cloves

½ whole nutmeg, finely grated

1 orange, zest only, finely grated

1 unwaxed lemon, zest only, finely grated

Preparation method

Mix the dried fruit with the sugar, cinnamon sticks, mixed spice, cloves, grated nutmeg and citrus zest in a large bowl.

Pour over the vodka, and cover tightly with cling film.

Place in the fridge and leave for 3 days, stirring once each day.

Line a sieve with a double layer of fine muslin and place over a large, clean jug.

Pour the dried fruit and vodka mixture into the sieve and allow to drip through into the jug.

Pour into a sterilized bottle.

Ingredients

1 cup milk

1/2 cup Irish cream liqueur (eg. Bailey's®)

1/2 cup vodka (eg. Smirnoff®)

1 (4 serving size) package instant chocolate pudding mix

Directions

Whisk together the milk, Irish cream liqueur, vodka, and instant pudding mix in a bowl until combined. Continue whisking for 2 minutes.

Spoon the pudding mixture into shot glasses or disposable 'party shot' cups. Chill until set, about 30 minutes. The shots will have the consistency of mousse.

Ingredients

1 4.2 oz box cookies n' cream flavor instant pudding

3/4 cup milk

1/4 cup vodka

1/2 cup white chocolate liqueur

1 cup whipped topping (plus more for garnish, if desired)

10 mini sandwich cookies, for garnish, if desired

1Pour pudding mix and milk into a bowl and stir until well blended.

2Stir in vodka and liqueur.

3Fold in whipped topping.

4Pour into individual serving containers.

5Chill for at least an hour.

6Immediately before serving, garnish with whipped topping and a mini cookie, if desired.
