Thanksgiving Day in Canada is on October 14 and it is never to early to plan for a large dinner.

Here are my tips

If you can buy a fresh killed turkey, do so. The taste and moistness will definitely be worth the extra money and believe me it will cost quite a bit more than your typical supermarket turkey.

Free Range turkeys usually have more flavor than those that aren't. I'd check out the brands first, because some "free range" turkey are only given slightly more room to walk around than regular grown turkeys or allowed out for a only a few minutes a day.

Smaller turkeys (14 pounds and under) are generally more flavorful and moister than larger birds, so if you have the room and need a bigger bird, roast 2 turkeys.

I haven't found a big difference in flavor or moisture between "fresh" and frozen supermarket turkeys. Most turkeys are shipped in to your market at such low temperatures that they are almost frozen when they arrive and then are defrosted in the market and sold as fresh.

If you buy a frozen turkey, try to be sure it has no freezer burn on it and make sure to move it from the freezer to the fridge to give it enough time to defrost. I usually give the turkey 1 extra day.

Allow 1 lb. of turkey per person.
