Everybody enjoys pie, arguably one of the best and most versatile food structures known to mankind. Sweet, savoury, filled with gravy or dressing, pies come in all shapes, dimensions and flavors. Why not celebrate this Pie Day by making a pie from scratch, utilizing your favored fillings?
LEMON MERINGUE PIE

1 pre-baked prepared or home-made pie crust shell
Preheat oven to 300°F.
7 tablespoons cornstarch
1 tablespoon flour
1 3/4 cups granulated sugar
2 cups water, boiling
4 egg yolks, beaten
grated rind of two lemons
1 tablespoon butter
1/4 teaspoon salt
1/2 cup unstrained lemon juice
Sift together cornstarch, flour, and sugar. Whisk in boiling water, continuing to stir until mixture becomes smooth.
Cook the mixture in top of a double boiler for five minutes. Be sure the water in the double boiler is simmering before the five-minute count begins.
Meanwhile, beat four egg yolks. Stir several tablespoons of the hot mixture into the beaten egg yolks (to temper), then slowly combine the egg yolks entirely with the remaining hot mixture. Stir in grated lemon rind, butter, salt, and lemon juice.
Stir constantly, continuing to cook until the egg yolks become smooth and thick.
Pour the filling into the baked pie shell. Cover with meringue (see below) while still warm, but not hot.
5 egg whites, stiffly beaten
1/4 teaspoon salt, scant
9 tablespoons granulated sugar
1/4 teaspoon lemon juice
Place salt and lemon juice in bowl and beat egg whites until stiff, but not separating. While beating, gradually add sugar.
Spread meringue on top of lemon filling.
Bake pie at 300°F until the meringue takes on a delicately golden color with lightly browned tops. Allow to cool before serving. Garnish with thinly sliced rounds of lemon dipped into coarse sugar or a fresh sprig of mint.

Single-crust Pie Turned Upside Down
Single-crust Apple Pie
Makes one 10" pie
1 cup all-purpose flour
1/2 tsp. salt
2-4 tbs. cold water
1/3 cup shortening
Sift together flour and salt. Cut in shortening with pastry blender or two table knives until pieces are the size of small peas. Sprinkle 1 tbs. water over part of mixture. Gently toss with fork and push to side of bowl. Sprinkle next tbs. of water over dry part. Mix lightly and push to moistened part at side. Repeat until all is moist. Form into ball.
Flatten ball slightly and roll 1/8" thick on lightly floured surface.
Always use a light touch and handle dough as little as possible.
7 cups sliced pared apples
1/2 to 3/4 cup sugar, depending on sweetness of apples
dash of salt
1 tsp. cinnamon
1/2 tsp. powdered vanilla
1/4 tsp. nutmeg, optional
1-1/2 tbs. butter
Preheat oven to 375F.
Combine sugar, salt, cinnamon, vanilla, and nutmeg, if desired. Stir to blend. Layer apples in 10" pie pan and sprinkle with sugar mixture. Dot with butter and place crust over pie. Trim crust and flute edge, tucking it slightly against the inside edge of pie pan to seal. Cut slits in top.
If you like, beat an egg with 1 tbs. water and brush lightly over crust. Sprinkle with sugar. This will give a pretty finish to the crust but is not required.
Bake in preheated oven 45 minutes or until crust is golden brown.
Kosher moon pies fathers day?
Here is link to a recipe for Moon Pies using Marshmallow cream which is the same thing as Marshmallow fluff. Marshmallow Fluff is Kosher and none of the other ingredients are not Kosher.
If you wish to make everything from scratch, here is a recipe for Kosher Marshmallows. Be sure your graham crackers are cooked and cooled, before preparing the marshmallow, as you want to spread it on the cracker before it set up
Easier yet, buy Graham Cracker, melt Kosher marshmallows in the top of a double boiler, allow to cool a bit then spread on the Graham Cracker and dip in chocolate.
