Unfortunately Niagara Falls is surrounded by a lot of commercialism and honky-tonk (more so on the American side than on the Canadian side. Niagara Falls, New York is also a much poorer city than is Niagara Falls, Ontario). Other than looking at the falls - perhaps taking the impressive boat cruise below them - there is not much to do. Nor is there in the city of Buffalo,

I assume you will be flying into Toronto and renting a car so set aside a day to go to Niagara. After (or before) seeing the Falls there is a vineyard area on the south side of Lake Ontario roughly between the towns of Niagara-on-the-Lake and Grimsby so if you enjoy wine tasting spend some time there doing so. There are a couple of small rivers there that also cascade over the Niagara Escarpment (which actually is hundreds of kilometres long, extending from Central New York through Ontario almost to :Lake Huron). Certainly not massive like Niagara Falls but still impressive, and surrounded by forest instead of commercialism.

You may well be quite impressed by Toronto. It is now one of the world's great cities. It is also now the world's most multi-ethnic, multi-cultural city (No! Not New York or Los Angeles.) and very prosperous -- Canada in general is currently wealthier than the USA, with average family wealth - note that I wrote "wealth" and not "income" - a whopping 38% greater than that of the average American family, something almost completely unknown among Americans who do not live close to Canada or otherwise have reason to visit it and/or know it (I am an American with a 2nd home in Canada). Traditional Canadian food being as interesting as - well - traditional British food enjoy eating in Toronto at a different ethnic place each midday and evening. Bon appetite.

One foodie thing to do during your holiday: to go to a bar and with a drink to munch down an order of "Buffalo Chicken Wings". Almost ubiquitous at any watering hole within 500 kilometres of the city - you will see signs promoting WINGS everywhere - Buffalo Chicken Wings were invented at the Anchor Bar in Buffalo, New York about 55 years ago. It is a dish comprised of a basket or bowl of fried chicken wings that have been coated with spices and covered with an also spicy barbeque sauce, served with a side order of blue cheese dressing and celery stalks (to be dipped into the dressing). Visiting that part of North America and not going to a bar and enjoying an order of Buffalo Chicken Wings would be like going to Paris and not seeing the Eiffel Tower!

2/3 weeks should allow you to visit the national capital, Ottawa, and maybe even Montreal, both like Toronto with several museums; Montreal is also multi-cultural with lots of immigrants although not so much as Toronto and with many of the immigrants (Canada has the largest percentage of foreign born in its population of any country in the world) as you would expect being from French-speaking countries (although most Montrealers are bi-lingual or tri-lingual, speaking English, too.)

The rustic, rural Laurentian Plateau (actually low mountains) north of Ottawa and Montreal is nice for

a romantic get-away.

If you can find a deal which will allow you to take a couple of days in Halifax, Nova Scotia, you might find it interesting from that province's large Scottish ancestry ('Nova Scotia' meaning New Scotland, after all).

As for meeting people and making friends I have always found that just happens coincidentally when traveling although I suppose it may be helpful by staring at a map in public places. Also by staying at

Bed and Breakfasts (French "gites" in Quebec), chatting with others doing the same at breakfast.
