Camcorders?

Hard drive or SD card is the way to go. The media that it records to has nothing to do with the quality.

The easier it is to use, the less likely you are to let it sit collecting dust in a closet somewhere. You dont want to have to be capturing tapes to your computer to be able to use the footage, trust me. I mean, its TAPE. You have to rewind, fast forward, all that stuff.

With HDD or SD: plug the camcorder into your computer, copy the clips over just like you copy pics from your digital still camera

With minidv tapes: plug your camcorder into your machine via firewire, and wait all day as the footage you recorded has to play back again, this time being recorded to the computer. Don't interrupt it though, because you'll lose the whole thing. And better make sure you don't have any blank spots in the middle of the tape or anything like that.
