Whipped cream will last you about 3 days, if covered and kept very cold......my suggestion is to keep it in the container till the last minute and then whip it......and have the whipping utensils as cold as they can be: put your hand mixer blades in the freezer along with the bowl that you're going to whip it in.......and have the cream as cold as possible as well.......whip first, then add any flavorings, vanilla, sugar, or sugar substitute.......

WHIPPED TOPPING

1/2 cup boiling water

3/4 cup granulated sugar

1 Tablespoon. Meringue Powder

Dissolve sugar in boiling water, cool completely. Add meringue powder and beat until meringue clings to the beaters, Set aside. In another bowl blend together and then beat for 10 minutes the following ingredients.

2 cups cake & icing shortening or 1 cup cake & icing shortening and 1 cup margarine

1 1/2 tsp flavoring

1 pound powdered sugar

1/2 tsp. salt

When all fluffy, add 1/2 of first mixture and beat well. Add remainder of meringue and mix well.

Successful whipped cream depends on a few things....a very cold and clean vessel to do the whipping, a very cold product to whip.....and wipping the product as fast as possible..to incorporate as much air and to avoid heat....the wrong type of friction (heat) can deflate your cream..a kithchen aid electric mixer works best.....put the very clean bowl and whipping attachment with the cream in the freezer for 10 minutes.....add the sugar and cream and let dissolve for about one minute as you stir by hand....then put the mixer on high.....when cream starts to come together and "shine"...it is done...if it looks dull and is too stiff you are almost making butter as overwhipping can seperate the butter solids and buttermilk.....best to use your whipped cream that day....or let melt and re-whip the next day or when you are ready to reuse....cause it will lose its light texture as it sits in the fridge overnight.

A good ratio for heavy cream to sweetener is 4/1....
