First off, this is your relationship and its up to you to make all the choices. Please take anything I say with a grain of salt because you know him, I don't.
Anyway, it sounds like to me that you are doing all the work in this relationship. For a relationship to truly work it needs work from both sides. One person can never hold a relationship together. At least not one that will flourish.
He needs to realize that his job is being a cop but his responsibility is to you.
Especially if you two ever were going to get married. He needs to share his feelings with you.
Maybe he needs to know that you want to know about his day and the things that happen (both good AND BAD) because when you are in a relationship and your mate has a bad day, you have a bad day too. You at least have the right to know what screwed up your perfectly good day. I understand his wanting to bottle things up because he doesn't want to hurt you or worry you. Instead the effect of bottling it up is the exact thing he doesn't want to happen. He hurts you and worries you.
If he cannot be a true partner with you then you need to find someone that will. And he needs to find someone he trusts.
