Helen's right, you shouldn't boil mulled wine; but if you start making it early enough, you can add quite a lot of water to the wine, even as much as 50/50, and it will still taste good and rich. You can also add grape juice, orange juice or apple juice too. The secret is to give it lots of time to infuse, and I would start the day before, let it simmer for an hour or so, then let it just sit overnight till it's time to heat it up again. Lots of spices help to make it taste rich; I always stick cloves into a whole orange and a whole lemon and add them to the pot as soon as I take it off the heat the first time.

By the way, congratulations on restricting your alcohol intake. It's not easy.

3 cups apple cider

1 stick (8 tablespoons) butter, softened

1/4 cup light brown sugar, packed

1 teaspoon ground nutmeg

1 teaspoon ground cinnamon

1 teaspoon ground cloves

8 graham crackers

1 teaspoon pumpkin pie spice

2 teaspoons rum extract

2 cups non-dairy whipped topping

4 whole cinnamon sticks

4 shots bourbon whiskey

Heat the apple cider in a nonreactive saucepan.

In a bowl, combine the softened butter, brown sugar, nutmeg, cinnamon, and cloves. Whip until the butter becomes creamy and the ingredients are incorporated. Place the graham crackers and pumpkin pie spice in a plastic baggie and crush with a rolling pin. Combine the rum extract with the non-dairy whipped topping. In a footed coffee glass, place a single cinnamon stick and a slice of spiced butter. Pour 1 shot whiskey into the glass. Ladle the hot cider to fill the glass. Garnish with a dollop of rum-flavored topping and a sprinkle of graham cracker crumb mixture. Serve warm.

How to make Non-alcoholic mulled wine for 50 people?

I love mulled wine as well. It's the perfect cold-weather drink, and the flavor is amazing. Here's a non-alcoholic take on mulled wine. This is a basic recipe, with a variety of juices. You can make a small amount to experiment with the flavor, and adjust the juices as you want. I've also seen it with just one type of juice (grape or cranberry) and then all the spices. It's up to your preference.

Here's the recipe:

2 gallons grape juice

7 1/4 cups water

3 1/4 cups sugar

7 1/4 whole cloves

14 1/3 cinnamon sticks

3 5/8 whole orange zest (to taste)

3 5/8 whole lemon zest (to taste)

3 5/8 crushed nutmeg seed (to taste)

9 cups lemon juice (or lime juice if you prefer)

-heat water and add sugar, cloves, cinnamon, nutmeg and zest

-boil for about 5 minutes, then let simmer for about 5 minutes

-strain syrup into large pot & add citrus juice; heat until gently bubbling

-add grape juice and keep at low simmer; add a couple orange peels (or lemon or lime)

My experience is plan on 1 gallon per 25 people. So this recipe should just get you by with 50. You can make a little extra if you wish as well. I'd definitely recommend testing the recipe yourself ahead of time to figure out the flavoring, I've come to find that the best way when finding recipes for big events. Good luck!
