Maple sap flows from the tree. Maple syrup is created by boiling the sap into a syrup. It takes approximately 10 gallons of sap to make 1 quart of syrup (a 40 to 1 ratio). The sap generally flows during the day.

Sap starts to flow between mid-February and mid-March. The exact time of year depends upon where you live and weather conditions. Sap flows when daytime temperatures rise above freezing (32 degrees Fahrenheit / 0 Celsius) and nighttime temperatures fall below freezing.

We attended the local nature park's maple syrup time days (as a HS field trip) and they had what they called a "cheap" evaporator, but it was huge, and you'd need a one car garage to do it! :-o!

But they also showed the old-fashioned way of boiling it over a fire in large kettles.

Did you know it takes 40-50 gallons of sap to equal one gallon of syrup (for maples anyway)?

Perhaps you could purchase a standard restaurant-sized stainless steel pan and cook it over two of your stove-top burners?? It would work well on a flat-top range.
