Easter is March 23, 2008 for the entire country regardless of state... including New Mexico. It is an all day thing that is not affected by time zone other than by the fact that when it is midnight in the eastern time zone it will only be ten in mountain so I guess technically those in mountain time zone will have to wait 2 hours for Easter to begin. In simple (?) terms Easter occurs on the first Sunday following the first full moon that occurs on or after the day of the vernal equinox (the first day of spring).
In 2011, the vernal equinox will be on Sunday, March 20. The first full moon after that will be Monday, April 18. Thus, Easter will be on Sunday, April 24.
The earliest Easter can be is March 22 as it was last in 1818 and will be next in 2285.
The latest Easter can be is April 25 as it was last in 1943 and will be next in 2038.

Are shops/museums open on Easter day in London (city centre)?
On Easter Day, large shops are legally obliged to stay closed (this is the law throughout England and Wales). So although small boutiques can open, the landmark stores in central London will all be closed.
However, all the big museums are open. (They are actually open every day of the year except for Christmas, 24-26 Dec).
So at the very least, you can visit the Natural History, Science and V&A museums in South Kensington, plus and the British Museum, National Maritime Museum/Royal Observatory and the historic royal palaces.
Because you have an answer here that says the exact opposite of this, I've double-checked all this info (I was planning to go museum-ing over the Easter weekend with friends anyway, so it was time well-spent!)
