Well, there are a lot of different varieties of cherries. They don't actually lose their blossoms, the blossoms tum into the cherries!
Most cherry trees will bloom in early spring, usually April (sometimes as early as late March, or as late as early May)then the flowers get pollinated and start to turn into fruit. The fruit is ready to pick anywhere from summer into fall, depending on the type. Ornamental Cherries (mostly planted for their beautiful spring flowers) have little berries in the fall, but they are not for eating.
how do you make vodka cherry cordials?
RASPBERRY OR CHERRY CORDIAL
Measure 2 quarts berries,make sure you de seed the stones!!! then mash. Heat together 4 cups sugar and 4 cups water. Let cool slightly. Add 1 quart vodka, 3/4 quart dry vermouth, and put in gallon jar. Cover tightly and open in 4-5 months. Siphon juice off berries and store in cool place.

You could trim it back but I'd give it another year and see if it branches on it's own. I have several of the bushes. They are very easy to grow from "cuttings". When you trim the plant in spring, while they are budding but before the leaves are out, take 4"-6" pieces, dip the ends in "root tone" or any rooting hormone, and stick them in the ground. Keep them moist and in a few weeks they sprout roots and you have new plants! Very easy, and very tasty berries.
