So fed up with my toddlers picky eating, any advice?

How much does he drink in a day? Make sure he isn't getting filled up on liquids instead of meals.

I was told most toddlers don't eat meat until after 2 years old. I found that to be true with my daughter. She still isn't a big meat lover, but will eat it from time to time. I always give it to her as an option, but she eats it less than half the time. I'm okay with that, as long as she is eating other things to make up for it.

You could always try different veggies and different things to add to your pastas. Spinach with pasta is great, and doesn't have a big flavor difference. Broccoli is also another god one. What about peanut butter and jelly? or peanut butter on toast?

All I can say is ever since my daughter started eating solids I would always put a meat, veggie, and fruit on her plate. Over time she has gotten better about eating all of it instead of just some of it. Of course most kids love the fruits because it is sweet, but he will come around to eating other things too. Don't give up!
